Oyster (mushroom?) discovers bacon substitute recipe

I do enjoy the lamb bacon at Kitchen Table, but I was not expecting to taste bacon when I was eating some mac & cheese at a treif restaurant in Berkeley. Evidently, oyster (yes, I am a cannibal) mushrooms, smoked gouda, and bread crumbs come together deliciously to fool me into tasting bacon. I had to ask the waiter to confirm that it was a vegetarian dish. Enjoy!
